Recipe: Spicy Chicken Quinoa

We are trying to eat healthier, but we still want flavorful, so I came up with this recipe. My family loves it Great served with chips, stuffed in half a zucchini (and baked), in a tortilla, or just by itself

Spicy Chicken Quinoa Ingredients

  • 1 cup chicken broth

  • cup quinoa

  • 1 pound ground chicken

  • teaspoon garlic powder

  • teaspoon cayenne pepper

  • 2 teaspoons olive oil, divided

  • 1 zucchini, diced

  • 1 (15 ounce) can corn, drained

  • 1 (15 ounce) can black beans, rinsed, drained

  • 1 (14.5 ounce) can diced tomatoes with green chile peppers, drained

  • 1 cup salsa

  • cup shredded Mexican cheese blend

How to Make Spicy Chicken Quinoa

  1. Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water is absorbed, 15 to 20 minutes.

  2. Mix chicken, garlic powder, and cayenne pepper together in a bowl.

  3. Heat 1 teaspoon olive oil in a large skillet over medium heat. Cook and stir chicken mixture in hot oil until chicken is cooked through, 5 to 10 minutes. Drain and discard grease. Transfer chicken mixture to a bowl.

  4. Heat remaining 1 teaspoon olive oil in the same skillet over medium-high heat. Cook and stir zucchini in hot oil until softened, about 4 minutes. Add cooked quinoa, chicken mixture, corn, black beans, tomatoes, and salsa to skillet; cook, stirring, until heated through and flavors have combined, 5 to 10 minutes. Sprinkle cheese over the top. Cover skillet and cook until cheese melts, 1 to 2 minutes.

  • This recipe is fantastic Easy to make and delicious. Its a nice spin on regular salsa chili (using ground chicken and adding the quinoa). I added a bit more salsa because I wanted to finish up the jar. Finely chopped the zucchini so I could "sneak" it in. Thanks for sharing this yummy (can be one pot) meal.

  • My favorite part about this meal is that it looks the same going in as it does going out.

  • This is a pretty good recipe. I made a few changes. I added 1/2 onion, about a 1/4 tsp. of cumin, salt to taste and cilantro as a garnish.

  • Didnt have zucchini or corn, substituted mixed vegetables. I also doubled the chicken and added cream of chicken soup. My 3 kids who can be very picky LOVED it

  • This is a very quick and easy weeknight dinner idea. Not much prep, using all things I had lying around. A very forgiving recipe... I browned my meat with minced fresh garlic and chopped onion. I sprinkled on spices as the meat browned (cumin, salt, pepper, oregano, paprika, a bit of chili powder). I had leftover sauted zucchini so I left the cooked meat in the pan, tossed in the can of tomato, zucchini, defrosted frozen corn and beans. I was out of salsa so skipped it. The quinoa was all cooked in time for me to toss it in. Whole thing took only 30 min or less. I served cheese on the side as well as sliced avocodo and some canned chilis and my family dressed their bowls how they preferred.

  • This can easily be vegetarian by using vegetable stock, increasing the quinoa and zucchini. Delicious

  • I enjoyed this quick and easy recipe. Instead of a can of diced tomatoes, I diced a whole tomato and 1/2 an Anaheim pepper. I also added an onion and doubled the quinoa.

  • I followed this recipe exactly. When I finished, I ended up keeping it on low and making a double amount of quinoa afterwards as I couldnt tell there was any in it. It tasted like just a seasoned plate of ground beef. Next time I would do 1.5 cups of quinoa, add some sauted onions, more seasonings and possibly an additional vegetable or more of the ones already in it. The recipe as is could be served with tortillas as tacos.

  • Thought that four servings wouldnt be enough so doubled the recipe; it made a TON Great tasting food, very easy to prepare. Avoid canned chicken if possible it tastes different

  • Great recipe. I will definitely use it again. I added some kale to the dish, along with the zucchini and it worked great. I deducted a star because it was not spicy. Next time, I will add more cayenne pepper, and include a little cumin as another reviewer suggested. Also, for new cooks, I added a teaspoon of salt and half a teaspoon of pepper to the ground chicken seasonings.
